A vocation driven by passion, passed down from father to son for almost four generations.

A cheese dairy rooted in its region

In 1930, Étienne Dongé bought the Triconville cheese dairy, south of the Meuse, having first joined the business as a cheesemaker in 1922. There, he produced Brie de Meaux PDO made from raw milk and hand-moulded. Today, the business is run by Luc and Jean-Michel Dongé. A family tradition, rooted in the same land for three generations.

Pâte molle Lait cru AOP

Hand-moulded using a Brie mould and matured in our cellars. The signature cheese of Fromagerie Dongé since 1930.

Coulommiers

Pâte molle Lait cru Croûte fleurie

Hand-moulded using a ladle, smaller and thicker than Brie, Coulommiers develops more intense flavours.

Le Barisien

The Barisien

Triple-crème Lait cru Croûte fleurie

Hand-moulded using a ladle. A creamy, mild triple-cream cheese made from raw milk, available plain, with Saint-Jean truffles or with morels.

Petit Dongé

The Small Dongé

Pâte molle Lait cru Croûte fleurie

Small, hand-moulded raw-milk Brie. Plain, with black truffle, or with Saint-Jean truffle.

Brie noir

Lait cru Affinage long

Brie de Meaux matured for at least 8 months. Intense aromas of dried fruit, nuts and caramel.

With a lifelong passion for raw milk, we have chosen to explore a parallel, complementary path with Le Végé du Fromager, guided by the same high standards: the pursuit of authentic flavour, a close relationship with our farmers, and respect for all living things.

Le Végé du Fromager

Fava bean

A legume grown in our farmers’ fields, less than 20 km from the cheese dairy. It enriches the soil and helps ensure the long-term viability of the farms.

The milk

High-quality milk that meets the specifications for Brie de Meaux PDO. Rather than pitting milk against plant-based ingredients, we have sought to bring them together. The creaminess of the milk naturally complements the broad beans.
